The BojaS postdoctoral fellowship, funded under the prestigious Marie Skłodowska-Curie program of Horizon Europe, runs from January 2025 to December 2026. The goal is to transform brewers' spent grain (BSG), which accounts for up to 85% of beer production waste. The disposal of this vast amount of waste presents environmental and economic challenges. Traditional disposal methods are not sustainable, prompting a need for innovative recycling and valorisation strategies. Addressing this issue aligns with global goals for sustainable production and consumption. In this context, the EU-funded BojaS project aims to transform BSG into valuable products through extraction of valuable phenolic compounds utilising environmentally friendly deep eutectic solvents. Utilisation of these extracts will demonstrate potential benefits for meat preservation and the brewing industry as it promises improvements in cost, safety, and environmental impact. The research is being conducted by the Faculty of Forestry and Wood Sciences, thanks to its high-tech equipment and modern technology. For example, a high-performance liquid chromatograph with a photodiode array detector (HPLC-PDA) and a refractive index detector (HPLC-RID) will be used, which is key to the project's objectives.
